Introduction:

The BVP industrial bakery (bakery, viennese pastry and pastries) is a demanding sector in terms of quality, taste and presentation of the products. Preparing premixes and feeding the kneaders is a crucial step to guarantee the quality of finished products.
In this feedback, we present to you how our client selected and implemented the DosingMatic® Master to improve the preparation of its premixes and optimize its production processes.


Context:

The company produces a wide range of products such as breads, pastries and pastries. In order to maintain a high level of quality and meet consumer expectations, the company uses various ingredients to improve the texture, taste and shelf life of its products.
These ingredients include texturizers and improvers such as gluten flour, ascorbic acid, emulsifiers, enzymes, seeds and yeasts.
The company's premixes vary in size, from a few kilograms to around ten kilograms, with ingredient doses varying from a few grams to several kilograms.
 

Problematic:

The company encountered difficulties in the manual preparation of its premixes due to the variability of doses and the complexity of the ingredient mixtures. Cross-contamination and dosing errors were common, leading to quality issues and raw material losses.
In addition, the manual process was slow and costly in terms of labor with a major difficulty in recruiting weighing operators.
 

Solution:

Setting up the DosingMatic® Master.

The company decided to implement the DosingMatic® Master to automate the preparation of its premixes and improve the quality and efficiency of its production.
The DosingMatic® Master has been integrated into the company's production process and configured to manage the different dose and premix sizes required.

Since implementing the DosingMatic® Master, the company has seen several significant improvements in its production:
